A slow day full of flavors and knowledge at the foot of the Börzsöny Mountains, where the garden, the landscape, and the table are naturally connected. The program brings the “from farm to table” approach to life through direct experience, shared activities, and personal encounters.
The tour guides conduct the program in two languages, Hungarian and English.

The program starts at the Pallag Valley Organic Garden with a light, fresh smoothie tasting. The day will be led by Dr. Alfréd Szilágyi (Frédi) and private chef Bálint Fazekas, who complement each other’s roles. Frédi will present horticultural, agroecological, and technical knowledge, while Bálint will share his expertise on the culinary uses, nutritional value, and practical processing of cultivated and foraged plants.

During the horticultural presentation, participants will gain insight into the operation of a biointensive farm with a permaculture approach. They learn about intensive, small-scale cultivation, fixed bed systems, soil-conserving and regenerative methods, the use of mulch, and the box system based on a short supply chain. The presentation focuses on soil health, biodiversity conservation, and the role of community agriculture. During the garden tour, Frédi and Bálint will jointly present the ecological role of plants, their traditional and modern uses, as well as their nutritional value and gastronomic possibilities.

The central element of the day is a communal cooking workshop, for which we will gather and sort ingredients together in the organic garden. Cooking will take place at the Kóspallag Cultural Center, where participants will prepare a seasonal, plant-based lunch together. The workshop focuses on the use of seasonal ingredients, products from local and regional small-scale producers, the incorporation of plants from small gardens and the wild, as well as a zero-waste and intuitive approach to cooking.

Afterwards, we will take a walk to the so-called Mocsár Hill to explore the surrounding meadows and viewpoints.

This experience day is a place for learning, cooperation, and joyful collaboration, where participants can experience firsthand how the garden, the landscape, and food are connected in a regenerative system.

This themed day is recommended for anyone

  • who is interested in alternative, sustainable agricultural practices,
  • would like to understand the origins of food and the background of production,
  • is open to practical workshops
  • or simply wants to spend a day in nature learning and enjoying themselves.

The program will be conducted in English and Hungarian.

Recommended accommodations in Kóspallag are available on the local government’s website: https://kospallag.hu/szallas-vendeglatas/. We also recommend the boutique rooms at NaturaHill Zebegény in Zebegény.

The program was created as a result of a regenerative tourism pilot project carried out by the Municipality of Kóspallag and BURST Nonprofit Kft. as part of the People Powered Tourism project. The aim of the project is to offer experience-based programs that build on local natural and cultural values and provide visitors with direct experience, active participation, and a sustainable approach.

The deadline for payment of the participation fee is upon registration.

Your registration will be considered final once the participation fee has been received.

You can inquire about transportation options by email, but the email sent a few days before the tour will also include the exact GPS coordinates of the meeting point.
